California Salad and Vinaigrette
Thinly slice
A crisp, cold cucumber or 2, and a red onion
into a salad bowl. Cut
A mellow California Avocado
in half, remove and discard the skin and seed; slice avocado fruit thinly or cut into small chunks. Sprinkle or brush the avocado slices or chunks with
Lemon juice, to protect from browning.
Put into salad bowl with cucumber and onion; refrigerate, covered.
Mix in small bowl or jar
6 Tablespoons Olive Oil
2 Tablespoons wine vinegar
1 teaspoon dry mustard
Seasoned or ground pepper, to taste
and a little salt
Drizzle dressing over vegetables, or pass it around in a small jar, at serving time.
